Ingredients

For the Bars:

  • 3 large ripe bananas (about 1 cup mashed)
  • 1 cup unsweetened almond butter (240g)
  • 2 cups rolled oats (180g)
  • 3/4 tsp sea salt
  • 1 1/2 cups fresh blueberries (150g)

Directions

  • Preheat your oven to 350°F (175°C).
  • Mash the ripe bananas until smooth, aiming for a consistency similar to applesauce.
  • Add the unsweetened almond butter, rolled oats, and sea salt to the mashed bananas. Mix until well combined.
  • Gently fold in the fresh blueberries, being careful not to break them apart.
  • Line your baking dish with parchment paper, pour the mixture in, and spread it evenly.
  • Bake for 25-30 minutes, until edges are golden and a toothpick comes out clean.
  • Let the bars cool completely, then lift them out and slice into squares or rectangles.
