Ingredients

For the Dipping Sauce:

  • 1/4 cup full-fat Greek yogurt
  • 1/4 cup light mayonnaise
  • 1/3 cup finely chopped dill pickles
  • 1 tablespoon fresh chopped dill
  • 1 teaspoon fresh lemon juice
  • 1/8 teaspoon kosher salt

For the Fish Sticks:

  • 1 1/2 lbs skinless wild cod, sea bass, or haddock fillets (thawed if frozen)
  • 2 large eggs (beaten)
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon paprika
  • 1/4 teaspoon kosher salt
  • 1 cup plus 2 tablespoons seasoned panko breadcrumbs (regular or gluten-free)
  • 1 teaspoon Old Bay seasoning
  • Olive oil spray
  • Lemon wedges (for serving)

  • In a medium mixing bowl, combine the Greek yogurt, light mayonnaise, chopped dill pickles, fresh dill, lemon juice, and kosher salt. Mix well until all ingredients are fully incorporated. Set aside in the refrigerator to let the flavors meld while you prepare the fish sticks.
  • Cut your fish fillets into strips, about 1 inch wide. This size ensures even cooking and a satisfying bite.
  • In one bowl, beat the eggs with Dijon mustard, the juice of half a lemon, paprika, and kosher salt. In another bowl, mix the panko breadcrumbs with Old Bay seasoning. This will be your coating mix.
  • Dip each fish strip into the egg mixture, allowing any excess to drip off. Then, transfer it to the panko breadcrumb mixture, pressing gently to ensure the breadcrumbs adhere well. Repeat this process for all fish strips.
  • Preheat your air fryer to 400°F (200°C). Once ready, spray the basket with olive oil to prevent sticking. Place the breaded fish sticks in a single layer, making sure they don’t touch. Spray the tops lightly with olive oil for extra crispiness.
  • Air fry the fish sticks for 10-12 minutes, flipping halfway through. They should be golden brown and cooked through when ready. Use a meat thermometer to check that they reach an internal temperature of 145°F (63°C).
