If using fresh salmon, cook until fully cooked, then flake into a bowl. If using canned salmon, drain and flake into the bowl.
Add eggs, red onion, dill, mayo, mustard, Old Bay seasoning, and panko to the salmon. Mix until well combined.
Form the mixture into patties about 2-3 inches in diameter and 1 inch thick.
Preheat the air fryer to 375°F (190°C) for about 5 minutes.
Lightly spray the air fryer basket with olive oil. Place the patties in a single layer, spray the tops with more olive oil.
Air fry the patties for about 10-12 minutes, flipping halfway through, until golden brown and crispy.
Remove from the air fryer and serve hot with lemon wedges on the side.
