Ingredients

For the Alivenci:

  • 1 lb Protein (Chicken, beef, or tofu)
  • 1 cup Bell peppers
  • 1 cup Onions
  • 1 cup Carrots
  • 1 tbsp Cumin
  • 1 tbsp Paprika
  • 1 tbsp Turmeric
  • 1 cup Fresh parsley or cilantro
  • 2 cups Chicken or vegetable broth
  • 2 cups Rice or quinoa
  • 2 tbsp Olive oil or coconut oil
  • 1 tbsp Lemon juice or vinegar

Instructions:

  • Step 1: Prepare the Ingredients - Wash and chop all vegetables. Dice the protein and measure spices.
  • Step 2: Sauté the Protein - Heat oil in a skillet, add protein, and cook until browned, about 5-7 minutes.
  • Step 3: Cook the Vegetables - Add vegetables to the skillet and sauté until tender, about 5-6 minutes.
  • Step 4: Add the Spices - Sprinkle spices over vegetables, stir, and cook for 1-2 minutes.
  • Step 5: Combine Everything - Return protein to skillet, add broth, and simmer for 5-10 minutes.
  • Step 6: Finish with Herbs - Stir in herbs and lemon juice just before serving.
  • Step 7: Serve - Serve Alivenci over rice or quinoa, garnished with herbs.
