Ingredients

  • 1 tablespoon olive oil for searing the scallops
  • 1 pound scallops fresh or thawed
  • 3 cloves garlic minced
  • 2 tablespoons olive oil for the sauce
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ¾ cup parmesan cheese grated
  • 1 cup spinach chopped
  • ½ cup sun-dried tomatoes

Instructions

  • Start by patting the scallops dry with paper towels. This step is crucial for achieving that perfect golden sear. Season both sides with salt and pepper.
  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Once hot, add the scallops in a single layer, making sure not to overcrowd the pan. Sear for about 2-3 minutes on each side until they are golden brown and opaque in the center. Remove the scallops from the skillet and set them aside.
  • In the same skillet, add 2 tablespoons of olive oil and the minced garlic. Sauté for about 30 seconds until fragrant. Then, add the chicken broth, heavy cream, garlic powder, and Italian seasoning. Stir to combine, bringing the mixture to a gentle simmer.
  • Gradually stir in the parmesan cheese, allowing it to melt into the sauce. Next, add the chopped spinach and sun-dried tomatoes, stirring until the spinach wilts and the mixture is well combined.
  • Return the seared scallops to the skillet, gently coating them in the creamy sauce. Allow everything to heat through for another 2-3 minutes, ensuring the scallops are warmed and the flavors meld beautifully.
  • Remove the skillet from heat and serve the Amazing Creamy Tuscan Garlic Scallops immediately. Pair with your favorite pasta, rice, or a fresh salad for a complete meal. Enjoy every delicious bite!
