  • 3 Avocados flesh scooped out
  • 1 medium Red or Yellow Onion optional, minced
  • 1 clove Garlic minced
  • 1 Jalapeño flesh and seeds removed, minced
  • 2 tablespoons Fresh Cilantro minced
  • 1 Lime juice of 1
  • Salt & Black Pepper to taste
  • Egg Roll Wrappers
  • 2-3 cups Vegetable or Peanut Oil for frying
  • Green Sauce for serving

  • Step 1: Prepare the Filling - In a mixing bowl, combine the scooped avocado flesh, minced onion (if using), minced garlic, minced jalapeño, minced cilantro, lime juice, salt, and black pepper. Mash the ingredients together gently, leaving some chunks for texture.
  • Step 2: Assemble the Egg Rolls - Take an egg roll wrapper and place it on a clean surface with one corner pointing toward you. Spoon about 2 tablespoons of the avocado mixture onto the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides. Roll it up tightly towards the top corner, sealing the edge with a bit of water.
  • Step 3: Heat the Oil - In a large pot or deep fryer, heat 2-3 cups of vegetable or peanut oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping in a small piece of the wrapper; it should sizzle immediately.
  • Step 4: Fry the Egg Rolls - Carefully place a few egg rolls into the hot oil, being cautious not to overcrowd the pot. Fry for about 3-4 minutes on each side or until golden brown and crispy. Use a slotted spoon to transfer the fried egg rolls to a paper towel-lined plate to drain excess oil.
  • Step 5: Serve with Green Sauce - Once the egg rolls are cool enough to handle, serve them warm with your favorite green sauce for dipping. Enjoy the crispy exterior and creamy filling!
