Ingredients

For the Crust:

  • 24 whole Oreo cookies crushed into crumbs
  • 5 tablespoons unsalted butter melted

For the Filling:

  • 32 ounces cream cheese room temperature
  • 1 cup granulated sugar
  • 4 large eggs room temperature
  • 3/4 cup Baileys Irish Cream
  • 6 ounces quality semi-sweet chocolate chips
  • 1/4 cup heavy cream
  • 3 tablespoons Baileys Irish Cream for ganache

Instructions

Instructions:

  • Step 1: Preheat your oven to 325°F (163°C).
  • Step 2: In a mixing bowl, combine the crushed Oreo cookies with the melted butter. Press into the bottom of your springform pan.
  • Step 3: In a large mixing bowl, beat the cream cheese until smooth. Gradually add the sugar and mix until well combined.
  • Step 4: Add the eggs one at a time, mixing on low speed until just combined.
  • Step 5: Pour in the Baileys Irish Cream and mix until smooth.
  • Step 6: Pour the cheesecake filling over the crust and bake for 55-60 minutes. Let cool in the oven with the door ajar for about an hour.
  • Step 7: Cover and refrigerate for at least 4 hours or overnight.
  • Step 8: In a small saucepan, heat the heavy cream, then add the chocolate chips. Stir until smooth and mix in 3 tablespoons of Baileys.
  • Step 9: Drizzle the ganache over the chilled cheesecake and serve.
