Ingredients

For the Chicken:

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs, beaten
  • 2 tablespoons olive oil
  • 1 tablespoon fresh parsley, for garnish

Instructions

Instructions:

  • Step 1: Preheat your oven to 400°F (200°C) for even cooking.
  • Step 2: Pat the chicken breasts dry with paper towels. Optionally, pound them to an even thickness.
  • Step 3: In one bowl, combine the Parmesan cheese, breadcrumbs, garlic, Italian seasoning, salt, and pepper. In another bowl, beat the eggs until well mixed.
  • Step 4: Dip each chicken breast into the beaten eggs, then coat in the Parmesan mixture, pressing lightly to adhere.
  • Step 5: Arrange the coated chicken on a baking sheet lined with parchment paper. Drizzle with olive oil.
  • Step 6: Bake for 25-30 minutes until cooked through and golden brown. Use a meat thermometer to check for 165°F (75°C).
  • Step 7: Let the chicken rest for a few minutes, garnish with parsley, and serve.

Equipment

  • Baking Sheet
  • Parchment Paper
  • Mixing Bowls
  • Whisk
  • Meat Mallet or Rolling Pin

Notes

  • Ensure chicken breasts are similar in thickness for even cooking.
  • Press the breadcrumb mixture firmly onto the chicken to prevent the coating from falling off.
  • Overcooking can lead to dry chicken; use a meat thermometer for best results.
