Ingredients

  • 6 large eggs
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup low-fat milk
  • 1 cup spinach chopped
  • 1/2 cup bell peppers diced
  • 1/4 cup onions finely chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried Italian herbs

Instructions

  • Start by preheating your oven to 375°F (190°C).
  • In a skillet over medium heat, sauté the onions and bell peppers until they soften, about 3-4 minutes. Add the chopped spinach and cook until wilted, approximately 1-2 minutes. Remove from heat and set aside.
  • In a large mixing bowl, crack the 6 large eggs and beat them with the low-fat milk. Add the salt, black pepper, and dried Italian herbs, whisking until well combined.
  • Fold the sautéed vegetables into the egg mixture, then gently stir in the shredded mozzarella cheese, ensuring that everything is evenly distributed.
  • Pour the mixture into a greased oven-safe skillet or baking dish. Place it in the preheated oven and bake for 25-30 minutes, or until the frittata is set and lightly browned on top.
  • Once baked, remove the frittata from the oven and allow it to cool for a few minutes. Slice it into wedges and serve warm, or let it cool completely and refrigerate for later.
