Ingredients

For the Potatoes:

  • 1 pound fingerling potatoes scrubbed and cut in half
  • 1 teaspoon lemon pepper (or to taste)
  • 2 tablespoons olive oil
  • 3 cloves garlic minced

For the Salmon:

  • 2 pounds salmon fillet
  • 2 tablespoons lemon pepper
  • 2 tablespoons lemon juice
  • ½ cup unsalted butter melted

Instructions

  • Step 1: Preheat your oven to 400°F (200°C) for even cooking.
  • Step 2: In a large mixing bowl, combine the halved fingerling potatoes with 1 tablespoon of olive oil, 1 teaspoon of lemon pepper, and minced garlic. Toss until evenly coated.
  • Step 3: Spread the seasoned potatoes on one side of your baking sheet in a single layer.
  • Step 4: In the same mixing bowl, whisk together the melted butter, remaining olive oil, lemon juice, and 2 tablespoons of lemon pepper. Place the salmon fillet on the other side of the baking sheet and brush it with the lemon pepper butter mixture.
  • Step 5: Bake for about 15-20 minutes, or until the salmon flakes easily and the potatoes are golden and tender.
  • Step 6: Remove from the oven, plate the salmon and potatoes, and garnish with additional lemon slices or fresh herbs if desired.
