In a small saucepan over medium heat, melt the butter. Once melted, add the thinly sliced garlic and sauté until fragrant, about 1-2 minutes. Be careful not to let it brown. Remove from heat and stir in the lemon juice, honey, and chopped mixed herbs.
Pour the garlic herb sauce over the mahi mahi fillets. Top each fillet with lemon slices, fresh thyme, and dill sprigs. Scatter the chopped cherries and drained capers over the top for added flavor.
