Instructions

Stepwise Method:

  • Start by preheating your oven to 375°F (190°C). This ensures that your mahi mahi cooks evenly and thoroughly.
  • In a baking dish, drizzle the oil over the bottom. Place the mahi mahi fillets in the dish, skin-side down. Season both sides with sea salt, pepper, and a pinch of chili flakes.
  • In a small saucepan over medium heat, melt the butter. Once melted, add the thinly sliced garlic and sauté until fragrant, about 1-2 minutes. Be careful not to let it brown. Remove from heat and stir in the lemon juice, honey, and chopped mixed herbs.
  • Pour the garlic herb sauce over the mahi mahi fillets. Top each fillet with lemon slices, fresh thyme, and dill sprigs. Scatter the chopped cherries and drained capers over the top for added flavor.
  • Cover the baking dish with aluminum foil and bake in the preheated oven for 15-20 minutes, or until the fish flakes easily with a fork. If you prefer a slightly crispy top, remove the foil for the last 5 minutes of baking.
  • While the fish is baking, prepare your sides. Cook the wild rice according to package instructions and steam the broccoli until tender but still vibrant green.
  • Once the mahi mahi is done, remove it from the oven and let it rest for a few minutes. Serve the fish over a bed of wild rice, accompanied by steamed broccoli. Drizzle any remaining sauce from the baking dish over the top for extra flavor.
