  • 1 scant cup panko bread crumbs
  • ½ cup finely grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon salt or to taste
  • ½ teaspoon freshly ground black pepper or to taste
  • 2 to 3 tablespoons fresh Italian flat-leaf parsley finely chopped for garnishing

Instructions

Cooking Instructions:

  • Step 1: Preheat your oven to 400°F (200°C). Slice the chicken breasts into four thin pieces.
  • Step 2: In a mixing bowl, combine the panko bread crumbs, Parmesan cheese, oregano, salt, and pepper. Mix well.
  • Step 3: Drizzle olive oil over the chicken and press each piece into the breadcrumb mixture for even coating.
  • Step 4: Line a baking sheet with parchment paper and arrange the chicken pieces, spaced apart.
  • Step 5: Bake for 20-25 minutes until cooked through and golden brown. Check internal temperature reaches 165°F (75°C).
  • Step 6: Garnish with parsley and serve with lemon wedges.
