Ingredients

  • 2 pieces green plantains
  • 1 tbsp curry powder
  • 1 tbsp paprika
  • 1 tsp salt
  • 2 tbsp grapeseed or avocado oil

Instructions

  • Preheat your oven to 400°F (200°C).
  • Peel the green plantains and slice them into thin rounds, about 1/8 inch thick.
  • In a mixing bowl, combine the sliced plantains with oil, curry powder, paprika, and salt. Toss well.
  • Line your baking sheet with parchment paper and spread the plantain slices in a single layer.
  • Bake for 15-20 minutes, flipping halfway through, until golden brown and crispy.
  • Cool on the baking sheet for a few minutes before serving.

Notes

  • Store in an airtight container for up to a week.
