Ingredients

  • 1 cup frozen corn kernels thawed
  • 1 can creamed corn (15-oz)
  • 1 cup sour cream
  • 1 box cornbread mix (8.5-oz)
  • 2 large eggs
  • 3 cups cooked chopped chicken
  • 1 cup BBQ sauce
  • 1 cup shredded cheddar cheese

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the cooked and chopped chicken with the BBQ sauce. Stir until well-coated.
  • In another bowl, mix the thawed corn kernels, creamed corn, sour cream, cornbread mix, and eggs. Stir until just combined.
  • Spread the BBQ chicken mixture evenly in the bottom of your prepared baking dish. Pour the cornbread batter over the chicken.
  • Sprinkle the shredded cheddar cheese on top of the cornbread batter.
  • Bake for 25-30 minutes, or until golden brown and a toothpick inserted comes out clean.
  • Let the dish cool for a few minutes before slicing. Serve warm.
