Ingredients

  • 1 lb ground beef (lean 85/15)
  • 1 medium onion (finely chopped)
  • 1 can Rotel Tomatoes with Green Chilis (10 oz, with their juice)
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp chili powder (or added to taste)
  • 1/2 tsp fine sea salt (or added to taste)
  • 1/4 tsp freshly cracked black pepper (or added to taste)
  • 1 can black beans (15 oz, with their juice)
  • 6 10-inch flour tortillas
  • 2 cups shredded Mexican cheese blend (or equal parts mozzarella and medium cheddar)

Instructions

  • In a large skillet over medium heat, add the ground beef. Use a wooden spoon to break it apart as it cooks. Stir occasionally until the beef is browned and cooked through, about 5-7 minutes.
  • Once the beef is browned, add the finely chopped onion to the skillet. Continue cooking until the onions are translucent, about 3-4 minutes.
  • Pour in the can of Rotel tomatoes with their juice, followed by the ground cumin, smoked paprika, chili powder, salt, and black pepper. Stir well to combine all the ingredients. Let it simmer for about 5 minutes, allowing the flavors to meld together.
  • Stir in the black beans (or tri-bean blend) with their juice. Allow the mixture to heat through, about 2-3 minutes. Taste and adjust seasoning if necessary.
  • On a clean surface, lay out a tortilla. Spoon a generous amount of the beef mixture onto the center of the tortilla, then sprinkle with shredded cheese. Fold in the sides of the tortilla and roll it up tightly from the bottom to the top. Repeat with the remaining tortillas and filling.
  • If you prefer crispy burritos, preheat your oven to 375°F (190°C). Place the assembled burritos seam-side down in an oven-safe dish. Bake for about 10-15 minutes, until the tortillas are golden brown and the cheese is melted.
  • Remove the burritos from the oven (if baked), and let them cool slightly. Serve them with your favorite toppings such as sour cream, guacamole, or salsa. Enjoy your delicious Beef Burrito!
