Ingredients

  • 1 lb baby potatoes mini or small varieties like baby gold potatoes
  • 1 tbsp olive oil high-quality extra virgin
  • 1 tsp Italian seasonings (dried)
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp pepper freshly ground

Instructions

  • Start by washing and drying the baby potatoes thoroughly. This step is crucial as excess moisture can prevent them from becoming crispy. If the potatoes are larger than bite-sized, you can halve or quarter them for even cooking.
  • In a mixing bowl, combine the washed baby potatoes with 1 tablespoon of olive oil, 1 teaspoon of Italian seasonings, 1 teaspoon of garlic powder, 1 teaspoon of salt, and 1 teaspoon of pepper. Toss everything together until the potatoes are evenly coated in the oil and seasonings.
  • Preheat your air fryer to 400°F (200°C) for about 5 minutes. This helps to ensure that the potatoes start cooking immediately when you place them in the basket, promoting crispiness.
  • Place the seasoned baby potatoes in the air fryer basket in a single layer. Avoid overcrowding the basket, as this can lead to uneven cooking. Cook them for 15-20 minutes, shaking the basket halfway through to ensure even crisping.
  • After 15 minutes, check the potatoes for doneness. They should be golden brown and crispy on the outside while soft on the inside. If they need more time, continue cooking in 2-minute increments until they reach your desired crispness.
  • Once the baby potatoes are cooked to perfection, remove them from the air fryer and let them cool for a minute. Serve them hot, garnished with fresh herbs if desired, and enjoy the delightful crunch and flavor!

Equipment

  • Air Fryer
  • Mixing Bowl
  • Measuring spoons
  • Cutting board & knife
  • Spatula or tongs

Notes

  • Don’t skip the drying step; moisture will prevent the potatoes from getting crispy.
  • Be mindful of potato size; larger ones require more cooking time.
  • Shake the basket halfway through cooking for even crispiness.
  • Allow the potatoes to cool slightly before serving to avoid burning your mouth.
