Ingredients

Instructions

Prepare the Crust

  • Preheat oven to 350°F (175°C). Combine crushed graham crackers and 1/4 cup granulated sugar in a medium bowl. Add melted butter and stir until mixture resembles wet sand.
  • Press mixture firmly into the bottom of a greased 8x8-inch baking pan to form an even crust layer.

Make the Cheesecake Filling

  • Beat softened cream cheese in a large bowl until smooth. Gradually add 1/2 cup granulated sugar and mix well.
  • Add vanilla extract and eggs one at a time, mixing thoroughly after each addition until batter is silky and lump-free.

Assemble Bars

  • Pour cheesecake filling evenly over the pre-baked crust.
  • Scatter fresh blackberries gently over the top, pressing them slightly into the filling without mixing in.

Prepare the Crumble Topping

  • Mix rolled oats, brown sugar, and remaining melted butter in a small bowl until crumbly and combined.
  • Sprinkle crumble mixture evenly over the blackberry-topped cheesecake layer.

Bake and Cool

  • Bake for 35-40 minutes until edges are set but center is slightly jiggly.
  • Remove from oven and cool completely at room temperature.
  • Refrigerate for at least 2 hours before slicing into bars for best texture.
