Ingredients

For the Granola Bars:

  • 2 cups rolled oats (gluten-free if needed)
  • 1.5 cups brown rice krispies
  • 0.25 cup shredded unsweetened coconut
  • 0.25 cup whole roasted almonds (roughly chopped)
  • 1 tablespoon chia seeds
  • 0.25 teaspoon salt
  • 0.5 cup peanut butter or almond butter (peanut butter is typical)
  • 0.5 cup honey
  • 1.5 teaspoons vanilla
  • 1 cup dried blueberries
  • 1 tablespoon water
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon gelatin
  • 0.25 cup Greek yogurt
  • 1 tablespoon honey
  • Pinch of salt
  • 2 cups powdered sugar

  • Step 1: Prepare Your Pan - Line a 9x9 inch baking dish with parchment paper, leaving some overhang on the sides.
  • Step 2: Mix Dry Ingredients - In a large mixing bowl, combine the rolled oats, brown rice krispies, shredded coconut, chopped almonds, chia seeds, and salt. Stir until well mixed.
  • Step 3: Combine Wet Ingredients - In a separate bowl, mix together the peanut butter, honey, and vanilla. Warm the peanut butter slightly in the microwave if needed.
  • Step 4: Combine Mixtures - Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.
  • Step 5: Press the Mixture Into the Pan - Transfer the mixture to the prepared baking dish and press down firmly to create an even layer.
  • Step 6: Bake - Preheat your oven to 350°F (175°C) and bake the granola mixture for about 15-20 minutes, until the edges turn golden brown.
  • Step 7: Prepare the Greek Yogurt Topping - Mix the Greek yogurt, honey, water, vanilla extract, gelatin, and a pinch of salt in a small bowl until smooth.
  • Step 8: Add the Blueberries - Once the granola base is out of the oven and slightly cooled, sprinkle the dried blueberries evenly over the top, then pour the Greek yogurt mixture over the blueberries.
  • Step 9: Chill and Cut - Let the bars cool completely, then refrigerate for at least 2 hours to set. Lift the bars out using the parchment overhang and cut into squares or rectangles.
