Ingredients

  • 3 pounds broccoli (about 4 heads, chopped into bite-sized florets)
  • 1/2 cup sunflower seeds (for crunch)
  • 1/2 cup c raisins (for sweetness)
  • 8 scallions (chopped into small rings, green part only)
  • 1/2 cup mayonnaise (use vegan mayonnaise for a plant-based option)
  • 1 1/2 tablespoons white balsamic vinegar (ensure vinegar is labeled gluten-free)
  • 1 tablespoon sugar (or substitute with your preferred sweetener, adjusting to taste)

Instructions

  • Start by washing the broccoli thoroughly. Chop it into bite-sized florets, discarding the tough stems.
  • Using your cutting board and knife, chop the green parts of the scallions into small rings.
  • In a separate mixing bowl, combine the mayonnaise, white balsamic vinegar, and sugar. Stir well until the mixture is smooth and creamy.
  • In your large mixing bowl, add the chopped broccoli, scallions, sunflower seeds, and c raisins. Pour the dressing over the top and toss until evenly coated.
  • Let the salad chill in the refrigerator for at least 30 minutes before serving.
