Ingredients

  • 6-8 pieces anchovies
  • 2 cloves garlic fresh, minced
  • 2 pieces pasteurized eggs
  • 1 large lemon juice only
  • 1 cup olive oil good quality
  • ½ cup grated Parmesan cheese
  • to taste sea salt

Instructions

  • Start by finely chopping the anchovies and garlic cloves. You want them to be as small as possible for a smooth dressing.
  • In your blender or food processor, combine the chopped anchovies and garlic. Add in the pasteurized eggs and the juice of one large lemon. Blend these ingredients until they are well combined.
  • With the blender running, slowly drizzle in the olive oil. This will create an emulsified dressing that is creamy and luscious.
  • Once the olive oil is fully incorporated, add the grated Parmesan cheese and season with sea salt to taste. Blend again until everything is mixed well and the dressing is smooth.
  • Give your dressing a taste. If you want more acidity, add a bit more lemon juice. Adjust the seasoning with more salt if needed.
  • Your Caesar salad dressing is now ready to be served! Toss it with fresh romaine lettuce and croutons, or store it in the refrigerator for later use.
