Ingredients

Graham Cracker Crust

  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter melted
  • 2 tablespoons sugar

Cheesecake Filling

  • 2 cups cream cheese softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 cups whipped topping

Apple Topping

  • 2 medium apples peeled, cored, diced
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon

Toppings

  • about 2 tablespoons caramel sauce
  • 1/2 cup streusel topping

Instructions

Prepare the Graham Cracker Crust

  • In a medium bowl, combine 1 cup graham cracker crumbs, 1/4 cup melted unsalted butter, and 2 tablespoons sugar. Stir until the mixture resembles wet sand. Press about two tablespoons of the crust mixture firmly into the bottom of each serving cup. Set aside.

Make the Cheesecake Filling

  • In a large bowl, beat 2 cups softened cream cheese with 1/2 cup sugar and 1 teaspoon vanilla extract until smooth and creamy. Gently fold in 2 cups whipped topping until fully combined and fluffy.

Cook the Apples

  • In a small saucepan over medium heat, combine 2 peeled, cored, and diced medium apples with 1/4 cup brown sugar and 1 teaspoon cinnamon. Cook, stirring occasionally, until the apples are tender but still hold their shape, about 5–7 minutes. Remove from heat and let cool slightly.

Assemble the Cups

  • Spoon a layer of cheesecake filling over the graham cracker crust in each cup. Add a generous spoonful of the warm apple mixture on top of the cheesecake layer. Drizzle each cup with about 2 tablespoons of caramel sauce.

Add the Streusel Topping

  • Sprinkle 1/2 cup streusel topping evenly over the caramel and apples in each cup to add a crisp finish.

Chill and Serve

  • Refrigerate the assembled cheesecake cups for at least two hours or until set. Serve chilled and enjoy.
