Ingredients

  • 1 cup finely chopped cauliflower (chop in food processor or grate with a cheese grater)
  • 1/2 cup finely grated mozzarella cheese
  • 5 tablespoons almond flour
  • 3 tablespoons finely grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1 pinch salt
  • 1 whole egg (beaten)

Instructions

  • Start by chopping the cauliflower into small pieces. Use a food processor for a quick chop or a cheese grater. Steam for about 5 minutes until tender. Drain and let cool.
  • In a mixing bowl, combine the steamed cauliflower, mozzarella, almond flour, Parmesan, oregano, garlic powder, and a pinch of salt. Mix until well combined.
  • Add the beaten egg to the mixture and mix until fully incorporated.
  • Preheat your grill or oven to 425°F (220°C). Line a baking sheet with parchment paper or grease it. Press the cauliflower mixture into a round shape, about 1/4 inch thick.
  • Bake for 20-25 minutes until golden brown and firm, or grill for 10-15 minutes, checking frequently.
  • Add your favorite toppings and return to the oven or grill for another 5-10 minutes until cheese is bubbly.
  • Let it cool for a few minutes before slicing.
