Ingredients

  • 1 heaping cup Fresh salsa
  • 4 cups Cauliflower rice (either from one head or pre-packaged)
  • 3 tablespoons Taco seasoning (homemade or store-bought)
  • Salt (to taste)
  • 1 tablespoon Chili powder (for heat)
  • 2 teaspoons Smoked paprika (for rich flavor)
  • 1 teaspoon Cumin (for warmth)
  • 1 teaspoon Oregano (for earthiness)
  • 1 teaspoon Garlic powder (for extra garlic flavor)
  • 1 teaspoon Onion powder (for depth)
  • Kosher salt (to taste)
  • Black pepper (to taste)
  • Red pepper flakes (to taste, for a bit of heat)

Instructions

  • Start by dicing the onion and bell peppers, and mincing the garlic. If you’re making your own cauliflower rice, chop the cauliflower into florets and pulse in a food processor until it resembles rice.
  • In a large skillet over medium heat, add 1 tablespoon of canola oil (or your preferred oil). Once heated, add the diced onion and bell peppers. Sauté for about 5 minutes, or until the vegetables begin to soften.
  • Stir in the minced garlic and cook for an additional minute. Then, add the ground turkey to the skillet. Use your spatula to break it up into small pieces as it cooks.
  • Once the turkey is browned, sprinkle in the taco seasoning, chili powder, smoked paprika, cumin, oregano, garlic powder, onion powder, kosher salt, black pepper, and red pepper flakes. Stir well to coat the meat and vegetables in the spices.
  • Pour in the heaping cup of fresh salsa, mixing it in thoroughly with the turkey mixture. Then, add the cauliflower rice, stirring to combine everything.
  • Cover the skillet and let the mixture simmer for about 5-7 minutes, or until the cauliflower rice is tender. Stir occasionally to prevent sticking.
  • Once everything is cooked through and the flavors have melded, remove the skillet from heat. Serve your Cauliflower Rice Turkey Taco Skillet warm, garnished with your favorite toppings like avocado, cilantro, or cheese.
