Ingredients

For the Crust:

  • 1/3 cup salted butter softened
  • 1/3 cup packed light brown sugar
  • 1 cup all-purpose flour
  • 1/2 cup finely ground walnuts

  • 1 large egg
  • 2 tablespoons milk
  • 1 tablespoon freshly squeezed lemon juice
  • 1/2 teaspoon vanilla extract
  • 8 ounces cream cheese at room temperature

Build Cheesecake Squares Step by Step

  • Step 1: Prepare the Crust. Preheat your oven to 350°F (175°C). In a mixing bowl, cream together the softened butter and light brown sugar until light and fluffy, about 2-3 minutes. Add in the all-purpose flour and finely ground walnuts, mixing until the dough forms.
  • Step 2: Press the Crust. Evenly press the dough into the bottom of your prepared 9x9 inch baking pan. Pack it down firmly to create a solid base. Bake for 10-12 minutes until lightly golden. Remove from oven and let cool slightly.
  • Step 3: Make the Cheesecake Filling. While the crust cools, beat the cream cheese until smooth. Add in the granulated white sugar, large egg, milk, lemon juice, and vanilla extract. Mix until well combined and smooth.
  • Step 4: Assemble and Bake. Pour the cheesecake filling over the cooled crust, spreading evenly. Bake for 20-25 minutes, until the filling is set and slightly jiggly in the center.
  • Step 5: Cool and Cut. Allow to cool to room temperature, then refrigerate for at least 2 hours. Once chilled, cut into squares and serve!
