  • 1/4 cup cocoa nibs

  • Step 1: Preheat and Prepare - Preheat your oven to 350°F (175°C). Line a 9x9-inch baking dish with parchment paper, leaving some overhang for easy removal later.
  • Step 2: Toast the Oats and Nuts - In a large mixing bowl, combine the rolled oats, slivered almonds, and shredded coconut. Spread this mixture evenly on a baking sheet and toast in the oven for about 10 minutes, or until lightly golden. Stir halfway through to ensure even toasting.
  • Step 3: Melt the Butter and Combine - While the oat mixture is toasting, melt the unsalted butter in a small saucepan over low heat. Once melted, remove from heat and stir in the honey, light brown sugar, and almond extract until well combined.
  • Step 4: Mix Everything Together - In the mixing bowl with the toasted oat mixture, add the melted butter mixture, cocoa nibs, and chopped tart cherries. Stir everything together until the dry ingredients are thoroughly coated.
  • Step 5: Press into the Dish - Transfer the mixture into the prepared baking dish. Use a spatula to press the mixture firmly and evenly into the dish. It’s important to pack it tightly to ensure the bars hold together after cutting.
  • Step 6: Cool and Cut - Allow the mixture to cool at room temperature for about 30 minutes. Once cooled, lift the granola slab out of the dish using the parchment paper. Cut into bars or squares, depending on your preference.
  • Step 7: Drizzle with Chocolate (Optional) - If you’re feeling indulgent, melt the bittersweet chocolate and drizzle it over the cut bars. Allow the chocolate to set before serving.
