Start by lining a baking sheet with parchment paper. This will prevent the Chex from sticking and make cleanup a breeze.
In a microwave-safe bowl, combine the white almond bark and shortening. Heat in the microwave in 30-second intervals, stirring in between until completely melted and smooth. Be cautious not to overheat, as this can cause the chocolate to seize.
In a large mixing bowl, add the Chex cereal and funfetti cake mix. Gently toss them together until the cereal is coated with the cake mix.
Once the almond bark is melted, pour it over the Chex and cake mix. Use a spatula to gently fold the mixture until all the cereal is evenly coated in the chocolate.
Sprinkle the powdered sugar over the coated Chex mixture. Again, fold gently to ensure that the sugar is well-distributed and every piece of cereal is coated.
Pour the Chex mixture onto the prepared baking sheet, spreading it out in an even layer. Allow it to cool completely, which will take about 30 minutes.
Once cooled, break the Chex Funfetti Cake Batter Buddies into clusters. You can store them in an airtight container at room temperature for up to a week, though we doubt they’ll last that long!
