  • Step 1: Cook the Pasta - Begin by bringing a large pot of salted water to a boil. Add in your 8 ounces of uncooked pasta and cook according to package instructions until al dente. Drain the pasta in a colander, reserving about half a cup of the pasta water for later. Set the pasta aside.
  • Step 2: Sauté the Chicken - In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the bite-sized chicken pieces and season them with 1/4 teaspoon oregano and 1/4 teaspoon garlic powder. Cook the chicken for about 5-7 minutes or until browned and cooked through. Stir occasionally to ensure even cooking.
  • Step 3: Create the Sauce - Once the chicken is cooked, pour in 1/3 cup of chicken broth, 1/2 teaspoon of Dijon mustard, and 1 teaspoon of lemon juice. Stir to combine and bring the mixture to a gentle simmer. This will create a delicious sauce that coats your pasta beautifully.
  • Step 4: Add the Vegetables - Stir in the halved little tomatoes and fresh baby spinach. Cook for another 2-3 minutes, just until the spinach wilts and the tomatoes soften slightly. This step will add both color and nutrients to your dish.
  • Step 5: Combine Pasta and Sauce - Now it's time to bring it all together! Add the cooked pasta to the skillet, tossing everything to combine. If the mixture seems a bit dry, add a splash of the reserved pasta water to help loosen it up.
