Ingredients

For the Chicken:

  • 1 pound thinly sliced chicken breasts (3 to 4 pieces)
  • 1 cup all-purpose flour
  • 2 large eggs (beaten)
  • 1 cup Italian bread crumbs
  • 1 cup Parmesan cheese (grated, divided)
  • ½ cup olive oil
  • 1 cup spaghetti sauce
  • 8 ounces mozzarella cheese (sliced or shredded)

Instructions

Preparation Steps:

  • Step 1: Preheat your oven to 375°F (190°C). Pound the chicken breasts to an even thickness of about ½ inch.
  • Step 2: Season the chicken with salt and pepper on both sides.
  • Step 3: Set up your breading station: flour in one bowl, beaten eggs in a second bowl, and combine bread crumbs with ½ cup of Parmesan in a third bowl.
  • Step 4: Dredge each chicken breast in flour, dip it in eggs, and coat it with the bread crumb mixture.
  • Step 5: Heat olive oil in a large skillet over medium heat. Fry the chicken for about 4-5 minutes per side until golden brown.
  • Step 6: In a baking dish, spread half of the spaghetti sauce, place the fried chicken, top with remaining sauce, mozzarella, and Parmesan.
  • Step 7: Bake in the preheated oven for 20-25 minutes until cheese is bubbly and golden.
  • Step 8: Let cool for a few minutes before serving with spaghetti or a salad.
