  • Step 1: Cook the Pasta - Begin by bringing a large pot of salted water to a boil. Add the uncooked pasta and cook according to package instructions until al dente. Reserve about 1/2 cup of the pasta water, then drain the pasta in a colander and set aside.
  • Step 2: Sauté the Chicken Sausage - In a large skillet, heat the olive oil over medium heat. Add the bite-size pieces of chicken sausage and cook for about 5-7 minutes, or until browned and cooked through. Stir occasionally to ensure even cooking.
  • Step 3: Add the Vegetables - Once the chicken sausage is cooked, add the minced garlic, fresh green beans, and sun-dried tomatoes to the skillet. Sauté for an additional 3-4 minutes until the green beans are tender-crisp.
  • Step 4: Incorporate Spinach and Seasonings - Add the thawed and drained spinach to the skillet, followed by the Italian seasoning, red pepper flakes, salt, and pepper. Stir well to combine all the ingredients. Cook for another minute or until the spinach is heated through.
  • Step 5: Combine Pasta and Sauce - Add the cooked pasta to the skillet with the sausage and vegetables. Pour in the lemon juice and a splash of the reserved pasta water to help bring everything together. Toss gently until all ingredients are well combined, adding more pasta water if necessary to reach your desired consistency.
