  • 1 pound chicken breasts Boneless, skinless
  • 2.5 tablespoons soy sauce
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.75 cup all-purpose flour
  • 5 tablespoons cornstarch
  • 0.25 teaspoon baking soda
  • 1 large egg lightly beaten
  • 1 cup cold sparkling water
  • to taste vegetable oil for frying
  • to taste preferred dipping sauce optional

  • Step 1: Prepare the Chicken - Cut the chicken breasts into bite-sized pieces. Marinate with soy sauce, salt, and black pepper for 15-20 minutes.
  • Step 2: Make the Batter - Whisk together flour, cornstarch, baking soda, and a pinch of salt. In another bowl, combine beaten egg with cold sparkling water, then mix with the dry ingredients until just combined.
  • Step 3: Heat the Oil - Heat vegetable oil to 350°F - 375°F in a deep fryer or heavy-bottomed pot.
  • Step 4: Fry the Chicken - Dip marinated chicken into the batter and fry in batches until golden brown, about 4-5 minutes. Drain on paper towels.
  • Step 5: Serve and Enjoy - Serve hot with your preferred dipping sauce.
