Ingredients

  • 1 cup cream cheese softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup strawberries hulled and diced
  • 1 cup graham cracker crumbs
  • 1/2 cup unsweetened dark chocolate chips
  • 1 tablespoon coconut oil
  • Fresh strawberries for garnish, optional

Instructions

Prepare the Cheesecake Filling

  • In a mixing bowl, beat the softened cream cheese until creamy and smooth. Add powdered sugar and vanilla extract, then continue mixing until fully combined. Gently fold in the diced strawberries and graham cracker crumbs. The mixture should be thick but scoopable.

Shape the Bites

  • Using a spoon or small cookie scoop, portion out the cheesecake mixture into small, bite-sized rounds. Place each round on a parchment-lined baking sheet. Once all are shaped, place the tray in the freezer for about 15 minutes to firm up the bites and make dipping easier.

Melt the Chocolate Coating

  • While the cheesecake bites chill, melt the dark chocolate chips and coconut oil in a microwave-safe bowl. Heat in 20-second intervals, stirring in between until smooth and glossy. Be careful not to overheat, as the chocolate can burn quickly.

Dip and Coat

  • Remove the cheesecake bites from the freezer. Using a fork or toothpick, dip each bite into the melted chocolate, ensuring it is fully coated. Allow excess chocolate to drip off before placing the bite back onto the parchment paper. Repeat until all bites are coated.

Garnish and Chill

  • Before the chocolate sets, top each bite with a small slice of fresh strawberry for a beautiful garnish. Return the tray to the refrigerator for at least 30 minutes to allow the chocolate to harden completely.

Serve and Enjoy

  • Once the chocolate is firm, your Chocolate Covered Strawberry Cheesecake Bites are ready to be enjoyed. Serve chilled for the best texture and flavor experience.

Equipment

  • Mixing Bowl
  • Electric mixer or hand whisk
  • Spatula
  • Small Bowl
  • Baking sheet lined with parchment paper

Notes

  • Always use softened cream cheese for a smooth, lump-free filling.
  • Chill the cheesecake bites before dipping to help them hold their shape during coating.
  • Melt chocolate slowly in short intervals to avoid burning and achieve a glossy finish.
  • Try swapping strawberries with raspberries or blueberries for a different fruity twist.
  • Store bites in an airtight container in the refrigerator for up to 4 days or freeze for longer storage.
