Start by rinsing the chicken wings under cold water. Pat them dry with paper towels, and then place them in a large mixing bowl. Sprinkle the salt over the wings and toss them to ensure they are evenly coated.
In a separate bowl, combine the Coca-Cola, soy sauce, smashed garlic, and sliced ginger. Squeeze the juice of the large lime into the mixture, being careful to catch any seeds. Stir well to combine all the ingredients.
Pour the marinade over the chicken wings in the mixing bowl. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 2 hours, or ideally overnight for maximum flavor.
Heat a skillet or frying pan over medium-high heat. Once hot, add the marinated wings (reserve the marinade for later). Cook the wings for about 10-12 minutes, turning occasionally until they are golden brown and cooked through.
While the wings are cooking, strain the reserved marinade into a small saucepan. Bring it to a simmer over medium heat. In a small bowl, mix the cornstarch with a tablespoon of water to create a slurry, then add this to the simmering sauce. Stir continuously until the sauce thickens.
Once the wings are cooked, pour the thickened sauce over them in the skillet. Add the unsalted butter and toss the wings to coat them evenly with the sauce. Cook for an additional 2-3 minutes until the wings are glazed and sticky.
Finely chop the scallions and sprinkle them over the glazed wings. Serve hot with lime wedges on the side for an extra zing!
