Ingredients

For the Cookie Dough Layer:

  • 1 cup almond flour provides the base and gives a nutty flavor
  • 1 cup vanilla protein powder adds a protein punch and enhances the texture
  • 1 cup melted coconut oil acts as a binder and gives a luscious mouthfeel
  • 1 cup pure maple syrup natural sweetness that pairs perfectly with the nutty flavors
  • 1 cup dark chocolate chips for a rich chocolate layer, divided
  • 4 ounces semi-sweet or bittersweet chocolate chopped to enhance the chocolate experience
  • 1 teaspoon coconut oil for melting the chocolate smoothly
  • sprinkles, Mini M&M candies, or crushed peppermints for decoration and added fun

Instructions

Cookie Dough Bark Directions:

  • Step 1: Prepare the Baking Dish. Line your 9x9 inch baking dish with parchment paper, leaving some overhang to facilitate easy removal later.
  • Step 2: Make the Cookie Dough Layer. In a mixing bowl, combine the almond flour, vanilla protein powder, melted coconut oil, and pure maple syrup. Stir until well combined and the mixture resembles a cookie dough consistency.
  • Step 3: Spread the Cookie Dough. Using a spatula, spread the cookie dough mixture evenly into the prepared baking dish. Press it down to create a smooth layer.
  • Step 4: Melt the Chocolate. In a double boiler or microwave-safe bowl, combine ¾ cup of dark chocolate chips and 1 teaspoon of coconut oil. Melt until smooth, stirring frequently.
  • Step 5: Pour the Chocolate Layer. Once melted, pour the chocolate over the cookie dough layer. Use a spatula to spread it evenly. Sprinkle the remaining dark chocolate chips on top.
  • Step 6: Add Your Toppings. Now comes the fun part! Decorate the top with sprinkles, mini M&M candies, or crushed peppermints. Get creative!
  • Step 7: Chill to Set. Place the baking dish in the refrigerator for at least 2 hours, or until the chocolate has completely set.
  • Step 8: Slice and Enjoy. Once set, lift the bark out of the baking dish using the parchment paper overhang. Slice into pieces and enjoy your homemade Cookie Dough Bark!
