Ingredients

For the Banana Bread:

  • 3 large overripe bananas mashed
  • 1/2 cup cottage cheese full-fat or low-fat
  • 1/2 cup unsweetened applesauce substitute for oil

  • 1 3/4 cups all-purpose flour sifted
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

  • Step 1: Preheat your oven to 350°F (175°C) and grease your loaf pan lightly with non-stick spray or line it with parchment paper for easy removal.
  • Step 2: In a large mixing bowl, mash the 3 overripe bananas using a fork or potato masher until smooth. A few lumps are fine; they add texture!
  • Step 3: To the mashed bananas, add 1/2 cup of cottage cheese, 1/2 cup of unsweetened applesauce, and 1/2 cup of sugar. Mix until well combined. Next, add the 2 large eggs and whisk until everything is incorporated.
  • Step 4: In a separate bowl, sift together 1 3/4 cups of all-purpose flour, 1 teaspoon of baking powder, and 1/4 teaspoon of salt.
  • Step 5: Gradually add the dry ingredients to the wet mixture. Gently fold the flour mixture into the wet ingredients using a spatula or wooden spoon. Be careful not to overmix; a few lumps are perfectly fine.
  • Step 6: Transfer the batter into the prepared loaf pan, smoothing the top with a spatula to ensure even baking.
  • Step 7: Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.
  • Step 8: Once baked, remove the bread from the oven and allow it to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!
