Ingredients

  • 1 tablespoon olive oil
  • 1/4 cup diced onion
  • 1/3 cup diced bell pepper
  • 2/3 cup chopped fresh spinach
  • 1/2 cup diced tomatoes
  • 4 large eggs
  • Salt and black pepper to taste
  • 1/2 cup low-fat cottage cheese
  • 4 small corn or flour tortillas
  • Sliced avocado, salsa, or hot sauce (optional)

Instructions

  • In a skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing for about 3-4 minutes until they start to soften.
  • Stir in the chopped spinach and diced tomatoes. Cook for an additional 2 minutes until the spinach wilts and the tomatoes soften. Season with salt and black pepper to taste.
  • In a bowl, whisk the eggs until well combined. Pour the eggs into the skillet over the sautéed vegetables. Allow them to sit for a few moments before gently stirring to scramble them. Cook until the eggs are just set.
  • Once the eggs are cooked, gently fold in the cottage cheese until everything is evenly combined and heated through.
  • While the egg mixture is finishing up, warm the tortillas in a separate skillet or microwave until they are soft and pliable.
  • Spoon the cottage cheese and egg mixture onto each tortilla. If desired, top with sliced avocado, salsa, or hot sauce for an extra kick!
