Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 packet ranch seasoning mix
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup fresh spinach
  • 1 cup cherry tomatoes halved
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add chicken and sear for about 5-7 minutes on each side until golden brown and cooked through. Remove and set aside.
  • In the same skillet, add ranch seasoning mix to the remaining oil. Stir for about 30 seconds, then add chicken broth and heavy cream, stirring to combine. Bring to a simmer to thicken.
  • Add fresh spinach and cherry tomatoes to the skillet. Cook for 2-3 minutes until spinach wilts and tomatoes soften.
  • Return chicken to the skillet and sprinkle mozzarella cheese on top. Cover and cook for an additional 3-5 minutes until cheese is melted and bubbly.
  • Remove from heat and garnish with parsley. Serve hot with sauce drizzled over chicken.

Notes
