Ingredients

For the Grits:

  • 1 cup grits providing a creamy base
  • 4 cups water for cooking the grits

For the Shrimp:

  • 1 pound shrimp peeled and deveined
  • 1 tablespoon olive oil for sautéing
  • 1 tablespoon butter adds richness
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 cup heavy cream for a luxuriously creamy texture
  • 1 cup shredded cheddar cheese adds depth and flavor
  • 1 teaspoon paprika for a hint of warmth
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

Step-by-Step Instructions:

  • In a medium saucepan, bring 4 cups of water to a boil. Once boiling, stir in 1 cup of grits and a pinch of salt. Reduce the heat to low, cover, and let it cook for about 20-25 minutes, stirring occasionally.
  • While the grits are cooking, heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium heat. Once hot, add the finely chopped onion and sauté for about 3-4 minutes.
  • Add the minced garlic to the skillet and sauté for an additional minute until fragrant. Then, add the shrimp, seasoning with salt, pepper, and 1 teaspoon of paprika. Cook for about 3-4 minutes, or until the shrimp turn pink.
  • Once the shrimp are cooked, pour in 1 cup of heavy cream and stir well to combine. Allow the mixture to simmer for a few minutes until it thickens slightly.
  • Once the grits are fully cooked, remove them from heat and stir in 1 cup of shredded cheddar cheese until melted and well combined.
  • Spoon the creamy grits into bowls and top with the shrimp mixture. Garnish with chopped green onions. Enjoy!
