In a medium saucepan, bring 4 cups of water to a boil. Once boiling, stir in 1 cup of grits and a pinch of salt. Reduce the heat to low, cover, and let it cook for about 20-25 minutes, stirring occasionally.
While the grits are cooking, heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium heat. Once hot, add the finely chopped onion and sauté for about 3-4 minutes.
Add the minced garlic to the skillet and sauté for an additional minute until fragrant. Then, add the shrimp, seasoning with salt, pepper, and 1 teaspoon of paprika. Cook for about 3-4 minutes, or until the shrimp turn pink.
Once the shrimp are cooked, pour in 1 cup of heavy cream and stir well to combine. Allow the mixture to simmer for a few minutes until it thickens slightly.
Once the grits are fully cooked, remove them from heat and stir in 1 cup of shredded cheddar cheese until melted and well combined.
Spoon the creamy grits into bowls and top with the shrimp mixture. Garnish with chopped green onions. Enjoy!
