Ingredients

For the Chicken:

  • 4 pieces boneless and skinless chicken breasts
  • 1 tablespoon olive oil for sautéing
  • 1 piece onion sliced
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon dried oregano
  • ½ teaspoon cayenne pepper or red pepper flakes
  • 6 slices pepper jack cheese
  • 1 tablespoon olive oil for roasting the veggies

Instructions

Cooking Instructions:

  • Step 1: Preheat the oven to 375°F (190°C).
  • Step 2: Wash and slice the green and red bell peppers and onion into thin strips.
  • Step 3: In a skillet over medium heat, add 1 tablespoon of olive oil and sauté the sliced onions and bell peppers for about 5-7 minutes until softened.
  • Step 4: Mix together the cumin, garlic powder, smoked paprika, salt, oregano, and cayenne pepper. Rub the mixture over both sides of each chicken breast.
  • Step 5: Arrange the seasoned chicken breasts in a baking dish and spread the sautéed veggies over the top.
  • Step 6: Layer the pepper jack cheese slices over the chicken and veggies.
  • Step 7: Bake in the preheated oven for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  • Step 8: Let it rest for a few minutes before serving.
