In a large pot, bring salted water to a boil. Add the spaghetti noodles and cook according to the package instructions until al dente. Drain the noodles in a colander and set aside.
In a large skillet or wok, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds, or until fragrant.
To the skillet, add the sliced mushrooms, carrots, and snow peas. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.
In a small bowl, whisk together the teriyaki sauce, soy sauce (or coconut aminos), honey, grated ginger, and Sriracha sauce.
Add the cooked spaghetti noodles to the skillet with the sautéed vegetables. Pour the sauce over the mixture and toss everything together. Drizzle with the remaining 1 tablespoon of olive oil, mixing until everything is well coated.
Remove from heat and serve your Easy Lo Mein hot, garnished with additional Sriracha if desired.
