Ingredients

  • 2 tablespoons olive oil divided
  • 8 ounces spaghetti noodles
  • 1 clove garlic minced
  • 8 ounces mushrooms cleaned and sliced
  • 2 carrots peeled and cut into 1-inch slices
  • 1/2 cup snow peas
  • 3 tablespoons teriyaki sauce
  • 3 tablespoons soy sauce or coconut aminos
  • 1 tablespoon honey
  • 1 teaspoon grated fresh ginger or 1/2 teaspoon ground ginger
  • 1 tablespoon Sriracha sauce

Instructions

  • In a large pot, bring salted water to a boil. Add the spaghetti noodles and cook according to the package instructions until al dente. Drain the noodles in a colander and set aside.
  • In a large skillet or wok, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds, or until fragrant.
  • To the skillet, add the sliced mushrooms, carrots, and snow peas. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.
  • In a small bowl, whisk together the teriyaki sauce, soy sauce (or coconut aminos), honey, grated ginger, and Sriracha sauce.
  • Add the cooked spaghetti noodles to the skillet with the sautéed vegetables. Pour the sauce over the mixture and toss everything together. Drizzle with the remaining 1 tablespoon of olive oil, mixing until everything is well coated.
  • Remove from heat and serve your Easy Lo Mein hot, garnished with additional Sriracha if desired.
