Ingredients

  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1 cup chopped cashews
  • 1 tablespoon salted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda

Instructions

  • Gather all your ingredients and hardware. Line a baking sheet with parchment paper and set it aside.
  • In a large microwave-safe bowl, combine 1 cup of granulated sugar and 1/2 cup of light corn syrup. Stir them together until they are well mixed.
  • Place the bowl in the microwave and heat on high for 4 to 5 minutes. Keep an eye on it, as microwaves can vary in power.
  • Carefully remove the bowl from the microwave. Stir in 1 cup of chopped cashews and 1 tablespoon of salted butter. Mix until the butter is fully melted.
  • Stir in 1 teaspoon of vanilla extract and 1 teaspoon of baking soda. The mixture will foam up; stir until well combined.
  • Quickly pour the hot mixture onto the lined baking sheet. Spread it out into an even layer.
  • Allow the brittle to cool completely at room temperature, about 30 minutes. Once cooled, break it into pieces and enjoy!
