Ingredients

  • 2 teaspoons active dry yeast
  • 1.5 cups warm water (about 110°F)
  • 4 cups bread flour (or all-purpose flour if needed)
  • 2 teaspoons salt
  • 1 tablespoon olive oil

Instructions

  • Step 1: Activate the Yeast - Combine warm water and active dry yeast in a mixing bowl. Let sit for 5-10 minutes until frothy.
  • Step 2: Mix the Dry Ingredients - In a separate bowl, mix together the bread flour and salt.
  • Step 3: Combine Wet and Dry Ingredients - Add olive oil to the yeast mixture, then gradually stir in the flour mixture until shaggy dough forms.
  • Step 4: Knead the Dough - Knead dough on a floured surface for 8-10 minutes until smooth and elastic.
  • Step 5: First Rise - Place dough in oiled bowl, cover with towel, and let rise for 1-2 hours until doubled.
  • Step 6: Preheat the Oven - Preheat oven to 475°F (245°C) and place pizza stone inside if using.
  • Step 7: Shape the Pitas - Punch down the risen dough, divide into 8 pieces, and roll into 1/4 inch thick circles.
  • Step 8: Bake the Pitas - Place rolled-out dough on baking sheet or pizza stone and bake for 5-7 minutes until puffed and golden.
  • Step 9: Cool the Pitas - Remove from oven and cover with towel to keep soft as they cool.
