Ingredients

For the Pesto:

  • 2 cups Fresh basil leaves
  • 1.5 cloves Garlic
  • 1/2 cup Nutritional yeast
  • 1/2 cup Sunflower seeds raw or toasted
  • 1/2 cup Olive oil
  • 1/2 tsp Salt

For the Pasta:

  • 4 oz Pasta your favorite type
  • 4 Tbsp Pesto prepared
  • 1/2 cup Reserved cooking water

  • Step 1: Cook the Pasta - Begin by bringing a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve about 1/2 cup of the cooking water, then drain the pasta and set it aside.
  • Step 2: Prepare the Pesto - In a blender or food processor, combine the fresh basil leaves, garlic, nutritional yeast, sunflower seeds, olive oil, and salt. Blend until the mixture is smooth and creamy. If it’s too thick, you can add a little of the reserved cooking water to achieve your desired consistency.
  • Step 3: Combine Pasta and Pesto - In a large mixing bowl, combine the drained pasta with the pesto. Toss well to ensure every piece of pasta is coated with the vibrant green sauce. If the pesto seems dry, add more of the reserved cooking water, a tablespoon at a time, until you reach your preferred creaminess.
  • Step 4: Serve and Enjoy - Plate your Easy Vegan Pesto Pasta and enjoy it warm. You can garnish it with additional sunflower seeds, a sprinkle of nutritional yeast, or even some cherry tomatoes for a pop of color!
