Ingredients

For the Salmon:

  • 1/2 to 3/4 pound center cut salmon fillet fresh, high-quality
  • 1 medium orange sliced thin
  • 2 cups sugar snap peas or substitute with other vegetables
  • 1 medium orange for juice
  • 1 tablespoon molasses
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • Kosher salt and freshly ground black pepper to taste

  • Step 1: Preheat your oven to 400°F (200°C) and gather all your ingredients and gear.
  • Step 2: Cut two large pieces of aluminum foil, each large enough to hold a salmon fillet and the vegetables.
  • Step 3: Lay the thin slices of the medium orange in the center of the foil.
  • Step 4: Nestle the salmon fillet on top of the orange slices.
  • Step 5: Surround the salmon with the sugar snap peas or your chosen vegetables.
  • Step 6: In a small bowl, whisk together the juice of the medium orange, molasses, olive oil, soy sauce, and a pinch of salt and pepper.
  • Step 7: Pour the marinade over the salmon and vegetables. Fold the edges of the foil to create a sealed packet.
  • Step 8: Place the foil packet on a baking sheet and bake for about 15-20 minutes.
  • Step 9: Once cooked, carefully open the foil pack and drizzle an additional 1/2 tablespoon of molasses over the salmon if desired.
