  • 1 large egg
  • 1 box (3.4 ounces / 96g) Instant Vanilla Pudding Mix
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/4 cups all-purpose flour
  • 1 cup white chocolate chips
  • 2 cups Fruity Pebbles

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the softened unsalted butter and packed brown sugar. Beat until light and fluffy.
  • Add the large egg and vanilla extract to the mixture and beat until well combined.
  • Sprinkle in the instant vanilla pudding mix and mix until fully incorporated.
  • In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add this to the wet ingredients, mixing just until combined.
  • Gently fold in the white chocolate chips and Fruity Pebbles, ensuring even distribution.
  • Using a cookie scoop, portion out dough onto a baking sheet lined with parchment paper, leaving space between each cookie.
  • Bake for 10-12 minutes or until edges are lightly golden. Let cool for 5 minutes before transferring to a wire rack.
