Ingredients

For the Crust:

  • 1.5 cups graham cracker crumbs
  • 0.25 cup granulated sugar
  • 0.5 cup unsalted butter melted

For the Filling:

  • 16 ounces cream cheese softened (2 8-ounce packages)
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 0.25 cup sprinkles
  • 0.5 cup sour cream
  • 1 tablespoon flour

Instructions

Prepare the Crust

  • Preheat your oven to 325°F (163°C). In a medium bowl, combine the graham cracker crumbs, 1/4 cup granulated sugar, and melted butter. Stir until the mixture is evenly moistened.
  • Press this mixture firmly into the bottom of your prepared 9x9-inch baking pan lined with parchment paper. Bake the crust for about 10 minutes until set and fragrant. Remove from the oven and let it cool slightly while preparing the filling.

Mix the Cheesecake Filling

  • In a large mixing bowl, beat the softened cream cheese with 1 cup sugar until smooth and creamy.
  • Add the vanilla extract and mix well. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
  • Gently fold in the sour cream and flour until the mixture is uniform.
  • Finally, sprinkle in the 1/4 cup of colorful sprinkles and give a few gentle stirs to distribute them evenly throughout the filling.

Bake the Bars

  • Pour the cheesecake filling over the pre-baked crust, smoothing the top with a spatula.
  • Bake the bars at 325°F (163°C) for 35 to 40 minutes, or until the center is mostly set but still slightly jiggly. Avoid overbaking to keep the cheesecake creamy.

Cool and Chill

  • Remove the bars from the oven and allow them to cool completely at room temperature.
  • Then refrigerate for at least 4 hours or overnight to let the filling firm up for clean, easy slices.

Serve and Enjoy

  • Once chilled, lift the bars out of the pan using the parchment paper edges and cut into squares.
  • Serve these delightful Funfetti Birthday Cheesecake Bars plain or with a dollop of whipped cream for an extra special touch.

  • 9x9-inch baking pan
