Ingredients

  • 2 small lemons
  • 4 fillets mahi-mahi 4-6 oz each
  • to taste Salt
  • to taste Ground black pepper
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 4 tablespoons unsalted butter
  • 1 tablespoon fresh parsley chopped

Instructions

  • Start by patting the mahi mahi fillets dry with paper towels. Season both sides generously with salt and ground black pepper.
  • In a large skillet, heat the olive oil over medium-high heat until it shimmers but is not smoking.
  • Carefully add the mahi mahi fillets to the skillet. Sear for about 4-5 minutes on one side until golden and crispy. Flip and cook for another 3-4 minutes until cooked through and opaque.
  • Remove the fish from the skillet and set aside. In the same skillet, reduce the heat to medium. Add the minced garlic and cook for about 30 seconds until fragrant, being careful not to burn it.
  • Add the unsalted butter to the skillet, allowing it to melt and combine with the garlic. Squeeze the juice of both lemons into the skillet, stirring to combine.
  • Return the mahi mahi fillets to the skillet, spooning the garlic butter sauce over the top. Cook for an additional minute to warm through. Sprinkle with fresh parsley before serving.
