Ingredients

For the Pork Chops and Potatoes:

  • 4 pieces boneless pork chops (or chicken/turkey if preferred)
  • 4 medium potatoes (diced, Russet or Yukon Gold)
  • 4 tablespoons unsalted butter
  • 4 cloves garlic (minced)
  • 1 tablespoon olive oil
  • 1 teaspoon dried rosemary (or fresh if available)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley (chopped for garnish)

Instructions

Cooking Instructions:

  • Step 1: Prepare the Ingredients - Start by washing and dicing the potatoes into bite-sized pieces. Mince the garlic and set both aside.
  • Step 2: Season the Pork Chops - Rub the pork chops with salt, black pepper, and dried rosemary. Make sure they are evenly coated for maximum flavor.
  • Step 3: Heat the Skillet - In a large skillet, heat the olive oil over medium-high heat. Once hot, add the pork chops and sear them for about 4-5 minutes on each side until they are golden brown and cooked through. Use a meat thermometer to ensure they reach an internal temperature of 145°F (63°C).
  • Step 4: Make the Garlic Butter - Remove the pork chops from the skillet and let them rest on a plate. In the same skillet, reduce the heat to medium and add the unsalted butter and minced garlic. Sauté until the garlic is fragrant but not burnt, about 1-2 minutes.
  • Step 5: Cook the Potatoes - Add the diced potatoes to the skillet with the garlic butter. Season with salt and pepper, and toss to coat. Cook for about 15-20 minutes, stirring occasionally, until the potatoes are golden brown and tender.
  • Step 6: Combine and Serve - Return the pork chops to the skillet, nestling them among the potatoes. Allow everything to cook together for a few more minutes to absorb the flavors. Garnish with fresh parsley before serving.

Equipment

  • Large Skillet
  • Cutting Board
  • Sharp knife
  • Meat Thermometer
  • Spatula or tongs

Notes

  • Swap the protein: Use chicken or turkey chops instead of pork for a different flavor.
  • Change the herbs: Experiment with thyme or oregano in place of rosemary.
  • Add vegetables: Toss in some green beans or carrots for added nutrition and color.
