Ingredients

For the Fries:

  • 4 medium Russet potatoes
  • 4 cloves Garlic smushed through a garlic press
  • 1 tbsp Fresh parsley finely chopped for garnish
  • 1 tbsp Truffle oil for drizzling
  • 1 tsp Truffle salt to season
  • Oil for frying vegetable or canola oil works best

Instructions

Method:

  • Step 1: Prepare the Potatoes - Wash the Russet potatoes thoroughly. Using a mandoline, slice the potatoes into even, thin strips (about 1/4 inch thick). Soak the potato slices in cold water for at least 30 minutes.
  • Step 2: Heat the Oil - In a large pot, add enough oil to submerge the fries completely. Heat the oil to 350°F (175°C).
  • Step 3: Dry the Potatoes - After soaking, drain the potato slices and pat them dry with paper towels.
  • Step 4: Fry the Potatoes - Carefully add a handful of the dried potato slices to the hot oil and fry in batches for about 4-5 minutes or until golden brown and crispy.
  • Step 5: Drain and Season - Remove the fries from the oil and place them on a plate lined with paper towels. Sprinkle with truffle salt and toss with garlic and parsley.
  • Step 6: Drizzle with Truffle Oil - Just before serving, drizzle a small amount of truffle oil over the fries.
  • Step 7: Serve Immediately - Serve your Garlic Truffle Fries hot, garnished with extra parsley and your favorite dipping sauce.
