Ingredients

For the Noodles:

  • 8 oz udon noodles or noodles of your choice
  • 1 large bunch green onions/scallions chopped
  • 1 tablespoon finely minced ginger root
  • 1 teaspoon finely minced garlic
  • 2 tablespoons vegetable oil
  • 3 tablespoons soy sauce
  • 2 teaspoons toasted sesame oil
  • 1 teaspoon rice vinegar
  • 1 teaspoon brown sugar
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon red chile flakes (optional)

Instructions:

  • Step 1: Cook the Noodles - Bring a large pot of salted water to a boil. Add the udon noodles and cook according to package instructions until al dente. Drain and set aside.
  • Step 2: Prepare the Ginger Scallion Mixture - Heat vegetable oil in a skillet over medium heat. Add minced ginger and garlic, sauté for about 30 seconds until fragrant.
  • Step 3: Add the Scallions - Add chopped scallions to the skillet and stir-fry for about 2-3 minutes until they soften slightly but retain some crunch.
  • Step 4: Combine the Sauce - In a small bowl, whisk together soy sauce, toasted sesame oil, rice vinegar, brown sugar, black pepper, and red chile flakes. Pour over sautéed ginger and scallions, stirring to combine.
  • Step 5: Toss the Noodles - Add cooked noodles to the skillet with the sauce mixture. Toss until noodles are evenly coated and heated through.
  • Step 6: Serve - Transfer to serving bowls and garnish with sesame seeds. Enjoy!
