Ingredients

  • 16 ounces cream cheese softened
  • 8 ounces sharp cheddar cheese grated
  • 2 cans mild chopped green chiles (4.5 ounces each)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Freshly chopped cilantro for garnish

Instructions

  • Start by gathering all your ingredients. Make sure the cream cheese is softened to room temperature for easy mixing.
  • In a mixing bowl, use an electric mixer or a whisk to beat the softened cream cheese until it’s smooth and creamy. This will be the base of your dip.
  • Gradually fold in the grated sharp cheddar cheese into the cream cheese mixture. Combine until fully incorporated.
  • Drain the chopped green chiles and add them to the bowl. Sprinkle in the garlic powder, cumin, salt, and black pepper. Stir until everything is well mixed.
  • Give your dip a taste and adjust the seasoning if necessary. If you prefer more spice, feel free to add extra black pepper or even some diced jalapeños!
  • Transfer the dip to a serving dish and sprinkle with freshly chopped cilantro for a pop of color and flavor. Serve immediately with tortilla chips, or refrigerate for later.

Equipment

  • Mixing Bowl
  • Electric Mixer or Whisk
  • Spatula
  • Serving dish

Notes

  • Store leftover dip in an airtight container in the refrigerator for up to 3-5 days.
  • For a lighter dip, substitute Greek yogurt for cream cheese.
  • Add diced jalapeños to increase the heat level if desired.
